Pancakes can’t be healthy.
Perhaps it is so. But they can be healthier. Like these. Don’t get me started on how they’re the best pancakes I’ve ever had and at the same time vegan and all of that other stuff.. Adapted from Engine2Diet. Serves two, as the time to make these are those lovely late weekend mornings (afternoons…)!
1 dl spelt flour,
1 dl oat (or whole wheat) flour,
1.5 tsp baking powder,
1 tbsp ground flaxseed meal (also nice to add extra whole flaxseeds),
1 tsp vanilla (pure or leave out),
2 dl rice milk (soy works),
1 tbsp apple sauce,
1.5 tsp agave syrup (I make it 1.5 tbsp if I didn’t add vanilla)
Mix all and let sit for 10 mins to let the spelt soak. Add 1 dl of blueberries or a banana that you’ve dices into tiny pieces, or a grated apple; whatever you like, and get yo frying action on, in coconut oil. Then serve with more blueberries (or…) and agave syrup/applesauce, and go to crispy pancake heaven.
