Make a cake out of them… That’s what me and two friends did today after making carrot juice.
You’re going to need two round pans as the recipe is for a layer cake. Line them with parchment paper, and then proceed to mix together dry ingredients in a bowl:
5.5 dl flour (can use whole wheat)
1 tsp baking powder
1 tsp cinnamon
tiny bit of fresh ground nutmeg
1/2 tsp salt
3.5 dl sugar
1 tsp vanilla
Add the wet ingredients to the dry mix:
6 tbsp ground flax seed + 1.8 dl warm water (this is your egg replacer; make the mix a minute or so beforehand as it takes about that long for the flax to become gooey.. like eggs.)
2.5 dl canola oil (sunflower, coconut, what have you)
Mix all but not completely (not good to over-work the batter); the last things to add are:
2 dl chopped walnuts
5 dl shredded carrots
Divide batter into the pans, bake at 180C for about 20 minutes.
When the cakes are cool, just like you, it’s time for… Frosting! I don’t use exact measurements, but it goes something like this:
1 dl vegan cream cheese
1 dl vegan butter/coconut oil
juice and zest from one lemon
tons of powdered sugar, keep adding until you’re happy.
